{Quick Country Cobbler}


We've been having sub-zero temps here in the last few days, so I thought it was high-time for a warm, hearty dessert.

My sister-in-law, Debby, shared her recipe for peach cobbler a few years ago, and it quickly became our family's favorite. It has a different texture than any other cobbler I've tried...it's kind of a chewy, dense, almost butter-cake style.

{Quick Country Cobbler}
1/2 cup butter (melted)
1 cup sugar
1 cup flour
1 1/2 tsp. baking powder
1/2 tsp. salt
3/4 cup milk
3 cups fruit
(peaches, cherries, berries work well...fresh, canned, or frozen--thawed first)

Combine butter, sugar, flour, baking powder, salt, and milk. Blend by hand and pour into 8x8 inch pan. OPTIONAL--Combine fruit with a little sugar (unless fruit was frozen with a sugar syrup). Pour fruit over batter. Bake at 375 for 30-50 minutes (depending on the fruit you use). 

As it bakes, the batter will come up to the top and cover the fruit. You want it to be very golden brown and fully set...if the top jiggles or feels unstable to the touch then it is not done yet.


Serve with a scoop of vanilla ice cream. YUM.

  6. This is how we make our cobblers in Arkansas...i love this version over the "pie" like cobblers.
